What difference (if any) would fitting 5mm spacers all round have on handling?

A little more stability but don't fit them up front , better to change offset

£5 for a set of spacers or £500 for new wheels.....no contest.

Plus the reason I'm going to fit them is I have put new longer studs in as the old ones were far too short, but these new ones aren't threaded far enough down to do the wheel up tight. So even if I did spend £500 on new offset wheels I'd still have the same problem.
